Hi, I'm new.

Hello, I'm new to the community. I have a passion for cooking, and I've been Ed-nos for a long time now. I have a lot of recipes at my disposal, so lets get started shall we?

Prep Time: 10 min
Total Time: 30 min
Makes: 12 servings, 1 muffin each

1-1/4 cups flour
1 Tbsp. CALUMET Baking Powder
1/4 tsp. salt
2 cups POST Raisin Bran Cereal
1 cup fat free milk
1 egg, lightly beaten
1/2 cup applesauce
1/3 cup firmly packed brown sugar
2 Tbsp. margarine, melted

PREHEAT oven to 400°F. Mix flour, baking powder and salt in large bowl. Mix cereal and milk in medium bowl; let stand 3 minutes. Stir in egg, applesauce, sugar and margarine. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)

SPOON batter into muffin pan sprayed with cooking spray, filling each cup 2/3 full.

BAKE 20 minutes or until golden brown. Serve warm.

I figured - bran is filling, and healthy, and helps you digest all the other stuff you may have eaten (promoting weight loss). So, kudos for bran.

For the vegans, soy milk. And if people want to try the splenda blend instead of the brown sugar, it probably wouldn't hurt.

MIX flour, baking powder, baking soda and cinnamon in large bowl. Mix cereal, milk and sugar in medium bowl; let stand 5 minutes. Stir in egg and applesauce. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)

SPOON batter into muffin pan sprayed with cooking spray, filling each cup 2/3 full.

BAKE at 400°F for 18 to 20 minutes or until golden brown. Serve warm.

If everyone is interested in more of these recipes I have more muffin ones. I love muffins because you can make them as large or as small as you want. They're easy to cut up into halfs or fourths or whatever you prefer.
